Ok, I'll just flat out admit that I'm a cupcake junkie. Too bad I live in Norway, because although we have some VERY good cakes, Norwegians just can't make cupcakes worth s***.
The fact that Bene's 10th birthday is coming up (April), and she LOVES chocolate cake and ABBA....... made me want to throw her a SingStar ABBA/chocolate cupcake theme party thingy with her girlfriends. (Jane, I partly got the idea watching Miranda's Birthday pictures, they were so, so great!)
So. Given that I've been to Walmart once the past 12 years (and let me tell ya, the cupcakes they sell there for 4th of July.... let's just say I ate twice as many as I confessed to last year....) and can't get a hold of any in the stores over here............ (K is partly right when he says that I want to go to the USA so bad so I can go shopping at Walmart and Target, ha! )..............................
Let's start the grand recipe-athon to get this going-through-cupcake-withdrawal Norwegian gal some easy to use cupcake recipes! With creamy icing!!! to make for her awesome daughter's 10th Birthday party, which would totally cover up her mothers addiction to the little cakes!!!
Now the catch is, it can't have any prefabricated mix in it (unless you're prepared so snail mail it to me!). Because there aren't any prefabricated cakes mixes for good cup cakes over here - at all - ..... I know. Crazy.
The only American thing for baking in my cupboards, is Wilton icing color
As for the icing....... bring it on!!!

I don't do anything by scratch..because I'm not a good cook...but I would be willing to send you some mixes for that awesome cupcake party. Just let me know.

Momof6, thanks so much for voluntering, I'll let you know!  (Hopefully, I'll be able to make this all from scratch!)
Now I'll be spending the evening looking at Wilton's recipes, but if you have one of your own, don't hesitate to pass it on?
Maybe this will turn into an ABBA party with downsyn cakes?

This is the recipe we use for all birthday cakes--it is wonderful and since it doesn't have eggs, you can feel free to have the kids lick out the bowl without worrying about salmonella.
Crazy Chocolate Cake:
Stir together in a large bowl:
3 cups flour
2 cups sugar
1 tsp. salt
2 tsp. baking soda
6 rounded tablespoons unsweetened
cocoa
After that is stirred together, make 3 holes in the dry ingredients and put in separate holes:
2 tablespoons distilled white vinegar
2 teaspoons vanilla extract
2/3 cup vegetable or canola oil
Pour 2 cups of water over the top and stir well with a spoon. You can either bake this in 2 greased and floured round cake pans for 25 minutes or until done at 350 degrees or put into cupcake pan lined with cupcake papers (makes 24 cupcakes) for about 15 minutes at 350 degrees.
We make this cake with the following white fluffy frosting which you can color with food coloring:
Mix together 1 cup milk and 4 tablespoons flour in a pan and heat on top of the stove, stirring together until smooth and thick. Set aside to cool.
Beat together for 4 minutes 1/2 cup butter which has been softened, 1/2 cup shortening (like Crisco), and one cup sugar.
Add flour/milk mixture when cool and beat for 4 more minutes.
Add 2 teaspoons vanilla extract and 2 big tablespoons of marshmallow fluff. Beat until smooth.
This is enough frosting for the cake or cupcakes. It does not need to be refrigerated.

Shortening is a solid vegetable oil--not very good to eat in mass quantities but nice for a treat. Here the major brand is Crisco and it either comes in a big can or in sticks kind of like butter that have measurements on the wrappers.
Marshmallow fluff is a white, extremely sweet spread that you can use to make an extremely sweet sandwich with peanut butter. It takes like marshmallows but is not as solid. It is sold in a jar or a plastic tub usually in the supermarket near the syrups, baking supplies or peanut butter and jellies.
Edited to add, you could probably use all butter if you couldn't find the shortening. Not sure what you could use for the fluff--maybe corn syrup.

That sounds delicious, Mary!!!
I'll be able to get all the ingredients - I remember seeing that Marshmallow stuff in a store in the city.
Will defintely try it out this weekend!
By the way, is there a really big difference between baking powder and baking soda? We have baking powder, and I do think that what you call baking soda must be what we just call sodium bicarbonate. Does anyone know?

Baking powder and soda are different. Baking soda is also called "Bicarbonate of soda".

Baking powder is 2 parts cream of tartar to one part bicarbonate of soda.
