My granddaughter has just started to lean her head backward mostly when eating, similar to the way a baby bird does , any thoughts on this, have informed doctors.

Has she ever had issues with eating or swallowing, or choking?

Could it be something to do with low muscle tone? If she is concentrating on chewing and swallowing she may forget to hold her head forward, so her head rolls back.
Have you or her parents tried putting something in front of her while she is eating, so keep her focussed on looking ahead? Eg a dvd, tv programme, book or favourite toy?
Good luck!

It is CRITICAL that you get a video swallow done. (this is different than a barium swallow) Make SURE they test with both solids and liquids. Tilting the head backward is a way to move the epiglottis so it protects the airway when the swallowing mechanism is not working correctly.

It was the first symptom my daughter displayed before she was diagnosed with cricopharyngeal achalasia. (this is achalasia of the UES, which is very rare. Achalsasia of the LES is much more common) It is extremely rare, and very few doctors know about it. We live in MN and have to go to Boston Children's for treatment.

While its not likely that your daughter has something as rare as CA, the symptom of tilting the head back when eating is a huge red flag there is a problem with the swallowing mechanism.
